Crunchy Topped Spice Cake |

I made this cake to take to work for our pot luck day, everyone loved it. No leftovers to take home, in fact I had to make another one for home. Ingredients:
3 eggs |
1/2 cup butter or margarine, melted |
1 can (15ounce) solid-pack pumpkin |
1 package spice cake mix |
1 1/2 cups finely chopped walnuts, divided |
1 cup butterscotch chips |
canned buttercream frosting (optional) |
Directions:
1. Preheat oven to 350.F 2. In a large mixing bowl,combine,eggs butter or margarine and pumpkin mix until smooth. 3. Add cake mix; beat on medium speed for 2 minutes. 4. Stir in 3/4 cup of the walnuts 5. Pour into a greased 13x9x2 inch pan 6. Sprinkle with butterscotch chips and remaining walnuts 7. Bake for 35-40 minutes or until a toothpick inserted near center comes out clean. 8. Cool on a wire rack 9. Melt about 1/2 cup frosting in microwave, and drizzle on top of cake |
