Crunchy Potato Appetizer Balls |

A Pampered Chef appetizer recipe. Ingredients:
2 cups cooked and mashed potatoes |
2 cups cooked ham, finely chopped |
1 cup swiss cheese, shredded |
1/2 cup ranch dressing |
2 eggs, beaten |
1/4 cup onion, finely chopped |
1 teaspoon prepared mustard |
1/2 teaspoon salt |
1/4 teaspoon pepper |
3 1/2 cups corn flakes, crushed |
Directions:
1. Preheat oven to 350 degrees. Combine the potatoes, ham, cheese, salad dressing, eggs, onion, mustard, salt and pepper in a large mixing bowl and mix well. Shape into 1 inch balls. Roll in the cornflake crumbs. Arrange the balls on a greased baking sheet. Bake for 30 minutes or until brown. |
