Crunchy Fried Pork Ingredients:
1 potato |
4 ounces pork |
1/2 egg |
1 tablespoon sage and onion prepared stuffing |
1 tablespoon oil |
1 onion |
Directions:
1. Peel the potatoes, cut them in quarters and cook in boiling salted water for 15 minutes, until soft. 2. Flatten the pork as best you can and, if the pieces are large, cut them into portions. Beat the egg. Dip the pork pieces into the egg, and then toss them in the dry stuffing or porridge oats to coat the meat thoroughly. 3. Heat the oil in a frying pan. Put the pork pieces carefully into the hot fat and fry both sides of the pork over a medium heat, until brown and cooked right through (about 15 minutes). Put the pork onto a hot dish and keep warm. 4. Drain the potato when cooked. Cut into dice. Peel and chop the onion and cook in the fat in the frying pan. Add the diced potato and continue cooking until just turning brown and crispy, stirring occasionally. Sprinkle the onion and potatoes over the meat, and serve hot. |
