This recipe is from Once Upon a Tart, I found it in a compilation cookbook. It's easy, colorful and yummy, something different for a potluck table. Add sliced mushrooms, jicama, shaved radishes for a taste change. Read more ....use your imagination! Ingredients:

6 celery ribs, 1/4 inch slices |
3 cucumbers, peeled, halved, seeded and cut into 1/4 inch diagonal slices |
3 scallions, white and green parts, cut into 1/4 inch slices |
1 red bell pepper, halved, cored, seeded and thinly sliced |
vinaigrette |
1/4 c white wine vinegar |
1 tbl dijon mustard |
1 garlic clove |
1 tsp ground cumin |
salt |
freshly ground pepper |
1/4 c evoo |
2 tbl finely chopped flat leaf parsley |
2 tbl finely chopped mint |
Directions:
1. Salad 2. Toss vegetables into a large bowl as you prepare them 3. Vinaigrette 4. In a small bowl, whisk together the vinegar, mustard, garlic, cumin, 1 tsp salt and a few grinds of fresh pepper 5. Slowly drizzle in the olive oil in a thin, steady stream, whisking as you go 6. This will form an emulsion and thicken the dressing 7. Stir in parsley and mint 8. To Assemble 9. Just before serving pour the vinaigrette over the salad and toss until everything is evenly coated 10. Taste to see if a little more salt is needed and serve. |
