There are lots of apples in this pie, but they cook down during baking. Really good topped with vanilla ice cream. The last time i made this pie My husband and mother inlaw ate it all before I was able to get one slice of it at all.I think I got this recipe actually from womansday in 2003.
Ingredients:
1 pie crust
1/2 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup cold butter, cut in small pieces
1/2 cup quick-cooking rolled oats (optional)
7 tart apples, medium to large (about 3 1/4 lb)
1 tablespoon lemon juice
1/2 cup granulated sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Directions:
1. Have a 9-in pie shell in a pie plate and on a baking sheet.
2. Place oven rack in the lowest position in the oven.
3. Heat oven to 450°F.
4. Topping: Mix flour, sugars and cinnamon in a medium bowl. cut in butter (or rub with fingertips) until mixture forms moist, coarse crumbs that clump together.
5. Filling: Peel, halve and core apples. Cut in 1/8-in.-thick slices.
6. place in a large bowl, add lemon juice and toss to coat. mix remaining ingredients in small bowl, sprinkle over apple slices and toss to coat.
7. Layer apples slices in pie shell, mound them higher in the center. Pat topping evenly over apples to form a top crust. Plce pie on baking sheet to catch any drips.
8. Bake 15 minutes. reduce oven temperature to 350 F and bake for 45 minutes longer or until skewwe meets some resistance when center of pie is pierced and topping is golden brown. Cool copletely on wire rack before seving.
