If you don't eat carrots, leave them out and add another 3/4 cup of chopped red bell pepper. The carbo rating will be the same. Ingredients:
3 cups packaged finely shredded green cabbage |
3/4 cup packaged preshredded carrot |
1/2 cup chopped onion |
1/4 cup finely chopped red bell pepper |
1/2 cup plain fat-free yogurt |
1 tablespoon honey dijon mustard |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Combine first 4 ingredients in a medium bowl; toss well. Combine yogurt and next 3 ingredients; pour over cabbage mixture. Toss gently to coat. Cover and chill 1 hour. Stir just before serving. 2. carbo rating: 5 |
