I like to make these with a salad for a light meal. Ingredients:
2 (5 ounce) cans chicken, white chunk |
1 cup fine breadcrumbs |
1 egg, slightly beaten |
1/4 cup walnuts, chopped |
1 tablespoon mustard |
3/4 cup corn flake crumbs |
3/4 cup milk |
1/3 cup mayonnaise |
1/4 cup onion, finely chopped |
1 teaspoon poultry seasoning |
Directions:
1. In a bowl,mix all ingredients throughly except cornflake crumbs. 2. Shape into 1 inch balls. 3. Roll into cornflake crumbs. 4. Arrange in a greased shallow baking pan and bake at 450 for 10 minutes or until browned. |
