Crunchy Chicken-Apple Pita |

This is a South Beach Diet recipe. It's my favorite way to eat chicken salad. Ingredients:
3/4 cup chopped cooked chicken |
1/2 medium apple, chopped |
2 tablespoons celery |
2 tablespoons light mayonnaise |
1 tablespoon sugar-free apricot preserves |
1 whole wheat pita bread, cut in half |
Directions:
1. Mix all ingredients, except pita, until well blended. Cover. 2. Refrigerate at least 1 hour. 3. Fill pita halves with chicken salad. |
