Ever wonder what to do with leftover cabbage? I bought a head of green cabbage and had 1/2 head leftover. What to do? So instead of lettuce, I used the cabbage instead. Surprise! It made the family eat hearty and smile! Read more ! Go figure...BTW red cabbage works just as well! Ingredients:
1/2 head of green cabbage, sliced thin |
2 tomatoes, diced |
20 black olives, halved |
1/4 cup green olives, sliced or use already sliced salad olives |
1 small can of roasted peppers, sliced |
1 can of water packed solid white tuna |
2 celery stalks (no tops) diced |
1 green pepper, diced |
1/4 red onion diced |
1/4 tsp of cayenne (or black, white, etc) pepper |
salad dressing (i prefer a tangy italian vinaigrette but my husband likes thousand island) |
Directions:
1. Prepare all of the ingredients (dicing, slicing as indicated) 2. In a large bowl, place the drained tuna and separate gently with a fork; do not to mash 3. Add the rest of the ingredients and toss 4. Chill until serving time 5. Serve the salad dressing separately (different strokes for different folks) |
