Crunchy Buttermilk Coleslaw |

This is a wonderful creamy coleslaw that is great for picnics and pitch-in meals. This is wonderful to make a day or so ahead. Ingredients:
1 lbs cabbage thinly sliced (napa or savoy is great) (about 1/2 head) |
5 carrots pealed and grated (1 1/2 cups) |
10 oz snow peas, sliced lengthwise (2 1/2 cups) |
1 cup mayonnaise |
1/2 cup buttermilk |
salt |
1 tbsp light brown sugar |
2 tbsp rice wine vinegar |
1 tsp grated fresh ginger |
Directions:
1. In a large bowl, toss together cabbage, carrots, and snow peas. 2. In a seperate bowl, whisk together mayonaise, buttermilk, salt, brown sugar, vinegar, and ginger until smooth. Pour over slaw and toss to combine. 3. Serve immediately or cover and refrigerate. |
