Crunchy Bok Choy Salad

A unique and colorful Asian flavored crunchy, healthy and light summer salad. From, Cooking Light.
Ingredients:
dressing
2 tbl. sugar
3 tbl. cider vinegar
3 tbl. low-sodium soy sauce
2 tsp. peanut butter
1/2 tsp. curry powder
1/4 tsp. crushed red pepper
salad
1 (3-ounce)package ramen noodles
1/4 c unsalted dry-roasted peanuts
3 c thinly sliced bok choy
1 c very thin red pepper strips
1/2 c shredded carrot
1/4 c diagnonally cut green onions
Directions:
1. To prepare dressing , combine first 6 ingredients in a large bowl; stir well with a whisk.
2. To prepare the salad, crumble noodles; discard seasoning packet.
3. Heat a nonstick skillet over medium-high heat.
4. Add peanuts; saute for 4 minutes or until browned. Remove from heat.
5. Combine crumbled noodles, peanuts, bok choy, and the remaining ingredients in a large bowl.
6. Drizzle dressing over salad; toss to coat.
7. Serve immediately.
