A unique and colorful Asian flavored crunchy, healthy and light summer salad. From, Cooking Light. Ingredients:
dressing |
2 tbl. sugar |
3 tbl. cider vinegar |
3 tbl. low-sodium soy sauce |
2 tsp. peanut butter |
1/2 tsp. curry powder |
1/4 tsp. crushed red pepper |
salad |
1 (3-ounce)package ramen noodles |
1/4 c unsalted dry-roasted peanuts |
3 c thinly sliced bok choy |
1 c very thin red pepper strips |
1/2 c shredded carrot |
1/4 c diagnonally cut green onions |
Directions:
1. To prepare dressing , combine first 6 ingredients in a large bowl; stir well with a whisk. 2. To prepare the salad, crumble noodles; discard seasoning packet. 3. Heat a nonstick skillet over medium-high heat. 4. Add peanuts; saute for 4 minutes or until browned. Remove from heat. 5. Combine crumbled noodles, peanuts, bok choy, and the remaining ingredients in a large bowl. 6. Drizzle dressing over salad; toss to coat. 7. Serve immediately. |
