A local pub nearby serves something like these, and I was just trying to make something similar. They ended up being better than the pub version, and a great snack for the game. Thanks to Keni, for the pic! Ingredients:
24 asparagus spears |
2 eggs |
2 cups panko bread crumbs |
3 tsp course sea salt |
Directions:
1. Preheat oven to 425 2. Cut, or snap the white ends off the asparagus spears 3. Beat the eggs, and pour them onto a small dish 4. Combine panko and sea salt on another dish 5. Dip the spears in the eggs, coating entirely, and then dredge in the panko mix 6. Place on a baking rack in a cookie sheet and bake for approx 15 minutes, or until the panko crumbs begin to brown 7. Serve with red pepper jelly for a dip...absolutely awesome!!! |
