Crumpets have holes for a reason. Ask the British and they'll tell you it's to put the proper amount of butter on each moist and delicious bite! Ingredients:
1 package active dry yeast |
1 tespoon sugar |
1/4 cup warm water, about 110 |
1/3 cup milk, at room temperature |
1 egg |
4 tablespoons butter |
1 cup all-purpose flour |
1/2 teaspoon salt |
butter and/or jam for serving |
metal rings for cooking, or use tuna cans with the top and bottoms removed. |
Directions:
1. In a large bowl, stir together yeast, sugar and water. 2. Let stand until bubbly, abot 5-15 minutes. 3. Blend in milk, egg and 1 tablespoon of butter. 4. Add flour and salt. 5. Beat until smooth. 6. Cover and let stand in warm place until almost doubled, about 45 minutes. 7. Brush a heavy bottom frying pan or griddle with butter. 8. Butter the inside of the metal rings. 9. Heat the rings in the pan over low heat, pour about 3 tablespoons of batter into each ring. 10. Cook until holes appear and tops are dry, about 7 minutes. 11. Remove rings and turn crumpets to brown the other side lightly, about 2 minutes. 12. Repeat with remaining batter. 13. Serve warm. |
