1 1/2 cups all-purpose flour |
1/2 cup cake flour |
3/4 cup light brown sugar, packed |
1/2 teaspoon salt |
1/2 teaspoon baking powder |
1/4 teaspoon baking soda |
1 teaspoon cinnamon |
2 tablespoons butter, softened |
1 tablespoon butter, melted |
1/2 cup white sugar |
2 large eggs |
1 teaspoon vanilla |
3/4 cup plain low-fat yogurt |
Directions:
1. Preheat oven to 350. 2. Whisk flours, 1/2 cup of brown sugar, salt, baking powder, baking soda and salt. 3. Remove 1/4 cup of the mixture and mix with remaining brown sugar and cinnamon. 4. Beat butter with white sugar. Add eggs one at a time. 5. Beat in 1/3 of the flour, 1/3 of yogurt. Repeat twice more. 6. Stir melted butter into the sugar/cinnamon mixture and sprinkle on top. 7. Bake for 35-40 minutes, rotating halfway through baking. |
