This is an old Jello brand gelatin recipe. My Mom would make it for special occasions. It looks like stained glass when cut and served. It is a little work, but it will impress! Ingredients:
1 3-oz jello package each of cherry, lime and orange |
3 c. boiling water |
1-1/2 c. cold water |
1 3-oz package lemon gelatin |
1/4 c. sugar |
1 c. boiling water |
1/2 c. cold pineapple juice |
1-3/4 c. thawed non-dairy whipped topping |
Directions:
1. Prepare the first three colors of jello using 1 cup boiling water and 1/2 cup cold water for each box. 2. Pour each color into an 8-inch square pan and chill overnight; cut into cubes the next day. 3. The following day: 4. Dissolve the lemon Jell-O and sugar in 1 cup boiling water; stir in pineapple juice. Chill until slightly thickened, about 45 minutes. 5. Prepare both envelopes of whipped topping as directed; blend into slightly thickened Jell-O. 6. Fold in Jell-O cubes. 7. Spoon into a 9-inch spring-form pan; chill overnight. 8. To release from pan, run knife around pan and unlatch. |
