Crowd Pleaser Omelet Casserole |

I have served many work crews with this quick and easy casserole prior to some hard work, like warehouse inventory. Keeps them full, satisfied and little work on my end! Ingredients:
1 lb fresh mushrooms, sliced |
4 tbsp butter |
8 eggs |
1 green pepper, sliced into rings |
1/2 c. sliced onion |
1/3 c. milk |
1 tsp salt |
1/4 tsp salt |
1/2 lb (one package) frozen breakfast link sausage (e.g. jones brown and serve) |
optional: 1/2 c. shredded cheese of choice |
Directions:
1. Preheat oven 350 degrees 2. Grease a 10 quiche or 13 x 9 glass rectangular pan 3. Slice mushrooms. 4. Melt butter in large skillet 5. Add pepper, onions, cook til tender about 5 min. 6. lightly beat eggs, add milk, and season with salt and pepper 7. Pour egg mixture into greased pan 8. arrange vegies and sausage (fun to try to write a message!) 9. bake in oven 25 or until edges browned and knife comes out of center clean 10. Serve with lots of buttered toast and coffee |
