Crosby's Molasses Sponge Cake |

Here is another great recipe from the Crosby Molasses Company, and once again, very simple but very delicious!! Ingredients:
5 eggs, separated |
1/2 cup sugar |
1/2 cup molasses |
1 tablespoon orange rind, grated |
1 1/2 teaspoons lemon rind, grated |
2 teaspoons lemon juice |
1 cup sifted cake flour |
1/2 teaspoon salt |
Directions:
1. Beat egg yolks until thick and lemon colored. Gradually add sugar and molasses beating after each addition, then beat 3 minutes longer. 2. Stir in orange rind, lemon rind, and juice. 3. Add sifted flour and salt 1/3 at a time. Beat well after each addition. 4. Beat egg whites until stiff, and fold into cake batter. 5. Bake at 325F for 35-40 minutes in an ungreased 9-inch tube cake pan. |
