Another one of moms favorites these are awesome. she cooked them for us all the time so thought I would share these they are great made with tuna perfect with lemon juice or wedges. Ingredients:
4 tbsp. butter/margarine 1/2 tsp. salt |
1 tsp. onion (chopped) 1/8 tsp. pepper |
1 cup milk 1 tsp. ac'cent |
3/4 cup flour (gold medal) 1 tbsp. wine wine |
2 eggs 1 cup (as needed) cracker meal |
2 cans tuna (olive oil, vegetable oil or water) drained should be about 3 cups of fish |
Directions:
1. Blend flour, salt & pepper. Heat butter and cook onions in low heat. Add blended items. 2. Cook low heat, stirring constantly until it gets thick and you can see the bottom of the pan. 3. Turn heat off. Add wine, ac'cent, & fish, (dash of nutmeg optional) Mix together. Turn over onto large plate and put in fridge for a couple of hours. 4. Take dough and form into croquettes, whisk eggs until mixed well, place each croqette into egg then into cracker meal (twice) so it gets good covering. 5. Let sit for awhile at room temp. until cooled. Fry until golden brown. (they cook fast, so use low heat or they can burn) 6. sprinkle with lemon if you like. |
