Crootini Con Ricotta Alle Verdure

Garden Crostini. An easy antipasto, hors d'oeuvre snack.
Ingredients:
8 oz. ricotta
3 tbsp finely chopped fresh basil.
2 tbsp finely chopped scallions
8 finely chopped black olives
1 tbsp finely chopped fresh parsley.
1 tbsp olive oil
1 small carrot, peeled and finely shredded.
3 tbsp unsalted butter, softened
salt and pepper to taste.
12 thin baguette slices.
Directions:
1. Preheat oven to 400 degrees
2. In a medium bowl, thoroughly combine ricotta, basil, scallions, black olives, olive oil, carrots, salt and pepper.
3. Stir until well blended.
4. Lightly butter bread and place on a baking sheet buttered-side up.
5. Bake for about 8 minutes or until lightly browned.
6. Spoon ricotta mixture over crostini (toasted bread)
7. Best served warm.
