Croissant Pudding With Caramel Sauce |

Yummy slant on bread pudding! Great for brunch or dessert!! Ingredients:
croissant pudding |
5 large croissants, cut crosswise into 1/2 inch rounds |
4 eggs, lightly beaten |
1 c sugar |
1 1/2 c milk |
1 t almond extract |
1 t vanilla |
1/2 c pecans, chopped |
caramel sauce |
1 c brown sugar, firmly packed |
1 c whipping cream |
1/2 c butter |
1 c pecans, chopped |
Directions:
1. PUDDING: 2. Butter a 9 pie plate. Layer the croissant rounds. Whisk together the eggs, sugar, milk, and etracts. Pour over croissants and sprinkle with pecans 3. Bake at 350 for 45 minutes, or until set. Serve warm, with caramel sauce 4. CARAMEL SAUCE: 5. in medium saucepan combine brown sugar, whipping cream and butter. Bring to boil. Simmer 5 minutes, stirring occaisionally. Stir in pecans and serve over warm croissant pudding. |
