My sister and I went to a cookbook signing several years back and this is one of the many great recipes that was in the cookbook, “Cooking in the Fast Lane”. We both fix it on and off throughout the year and our families like it. Read more . Hope yours will too. Ingredients:
(1-lb) dried white beans |
1-tspn salt |
4-cups water |
3 links andouille sausage, sliced |
3-stalks celery, chopped |
1/4-cup lentils |
1-tspn. ground black pepper |
2-tbspn. minced garlic |
1-onion, chopped |
10-oz(can) rotel tomatoes |
Directions:
1. Soak what beans overnight. 2. Drain and place in slow cooker; add lentils, salt, pepper, water, garlic, sausage, onions, celery and tomatoes. 3. Cook on high for 9 hours and on low for 2 hours. 4. NOTE: This is good served over hot cornbread with a side salad. 5. -Susana |
