A Pad-Thai-like dish. Very good. Ingredients:
2 -3 lbs chicken, skinned |
1 red bell pepper |
1 onion, chopped |
1/2 cup chicken broth |
1/4 cup soy sauce |
1 tablespoon cumin |
3 garlic cloves |
1/2 teaspoon red chili pepper flakes |
1 teaspoon salt |
pepper, to taste |
2 tablespoons cornstarch |
2/3 cup creamy peanut butter |
1 tablespoon soy sauce |
1/4 cup lime juice |
1/4 cup cilantro, chopped |
3 green onions, chopped |
1/2 cup roasted peanuts, chopped |
Directions:
1. Place Chicken, Bell pepper and Onion in Crockpot. 2. Mix soy sauce, broth and spices together. 3. Pour mixture over Chicken. 4. Cook on high for 3 hours. 5. Whisk Peanut butter, starch, 1 Tablespoon of Soy sauce and lime juice together. 6. Add 1 cup of juices from crock pot and mix until smooth. 7. Stir mixture into crock pot. 8. Cook 30 minutes more. 9. Garnish with cilantro, green onion and peanuts. 10. Serve with Rice. |
