I love the smell of this soup cooking all day in my kitchen Ingredients:
2 cups cubed fully cooked ham |
1-1/2 cups dry split peas, sorted |
1 cup chopped onion |
1 cup chopped celery with leaves |
1 cup chopped carrot |
2 tbsp. fresh parsley |
1/2 tsp. dried thyme |
1/4 tsp. pepper |
4 cups veggie broth ( or you can use chicken) |
2 cups water |
Directions:
1. In 4-6 quart crockpot, combine all ingredients. 2. Cover and cook on low for 10-12 hours or on high for 4-5 hours. 3. Just before serving use a potato masher to mash some of the peas in the soup for a thicker consistency. |
