This recipe is perfect for the holidays or get-togethers because you don't have to mash potatoes at the last minute, but easy enough to prepare any day you feel like it. Ingredients:
5 lb red potatoes, peeled and cut into chunks |
1 tbsp minced garlic |
2 cubes chicken bullion |
8oz. container sour cream |
8oz. packet cream cheese, softened |
1/2 cup butter , softened |
salt and pepper to taste |
Directions:
1. Bring a large pot of salted water to a boil. 2. Add potatoes, garlic and chicken bullion cubes. 3. Cook potatoes until tender but still firm, about 15 minutes. 4. Draon, reserving a little cooking water. 5. Mash potatoes with sour cream and cream cheese, adding reserved water to reach desired consistency, 6. Transfer to a 4 quart crockpot, cover and cook on low for 2-3 hours. Just before serving, stir in butter and season with salt and pepper to taste. |
