I didn't grow up eating lentils but my husband did. he asked if I would make some, and I declined, over and over again. I just had NO idea how I would do it. I finally started gathering a few ingredients, pulled out my handy crock pot and cooked them for 8 hours. I'm sad I didn't do this long ago because they were SO good. We ate them 3 days in a row and finished off the entire batch. Ingredients:
1 (16 ounce) bag lentils (washed and soaked over night) |
3 cups chicken broth |
1 onion, diced |
2 carrots, diced |
4 stalks celery, diced |
2 garlic cloves |
1 smoked ham hock |
1 cup of diced ham (we buy the ham steak) |
Directions:
1. >Combine all ingredients, and set in the crock pot on low for 8-10 hours. 2. >We serve ours with fresh baked rolls! 3. >(and word to the wise, while these are good on the first night, they are even better on the second!). |
