I copied this recipe down one day, years ago, while watching Marianne Esposito make it on her cooking show Ciao Italia . It is so yummy served with warm, crusty french bread! Ingredients:
2 cups lentils |
2 quarts chicken broth |
2 celery ribs, chopped |
1 onion, chopped |
2 cups plum tomatoes, canned |
1 cup tiny pasta |
salt and pepper |
1/4 cup olive oil |
Directions:
1. Rinse lentils and put into crockpot. 2. Add remaining ingredients and stir. 3. Cook, covered on low for 6-8 hours. |
