I made this dish based on flavors that I wanted to combine. This works really well for the days when you don't have a lot of time to spend in the kitchen or when you want to have dinner waiting for you when you get home. Ingredients:
1 lb. pork tenderloin, cut into bite sized pieces |
2 red delicious apples, skin on, cut into bite sized pieces |
2 small sweet potatoes, peeled and cut into bite sized pieces |
1 small yellow onion, sliced |
2 cloves garlic, minced |
1-2 c. medium red wine |
3-4 c. chicken broth (enough to come up to top of solids) |
1 tb. coarse ground mustard |
1 tsp. dried marjoram |
1/4 tsp. ground nutmeg |
salt and pepper to taste |
Directions:
1. In a 4 qt. crock pot, layer sweet potatoes, apples, onion, garlic and then pork. 2. Mix wine, mustard, pepper, nutmeg and marjoram in a small bowl, then pour over pork. 3. Pour in enough chicken broth to come up to the pork. 4. Cook on high for 5-6 hours or on low for 10-12 hours. |
