Crockpot Garlic Mashed Potatoes |

This is very easy and delcious - simple yet it pleases mashed potato lovers! Ingredients:
1, 3 lb bag red skinned small potatoes |
1/2 cup water |
4 large cloves of garlic smashed |
2 tbs olive oil |
4 oz cream cheese ( low fat is also fine ) |
1 tbs fresh minced chives |
salt and pepper to taste. |
Directions:
1. Cut potatoes in halves or fourths so they are the same size pieces for even cooking. In pot place potatoes, water, oil and garlic. Stir witrh spoon. Then cover and cook high 2 1/2 to 3 hours or until potatoes are tender. Mash with potato masher. Stir in 4 0z. cream cheese and 1 Tbs fresh chopped chives. Salt and pepper to taste. 2. Yield: 4 to 6 servings |
