I really enjoyed this soup. Next time I might add more cheese and put the bread and soup all in the oven, after cooking in the slow cooker.
Ingredients:
3 large onions, sliced then havled ( about 3 cups)
3 tbsp margarine, melted
1 tsp sugar
1/4 pepper ( or how much you would like)
1 tbsp worchestershire sauce
4 (14oz) cans of beef broth
8 ( 1 inch thick) slices of french bread
3 oz ( 3/4 cup) shredded mozza cheese ( i bet swiss would be nice ) i just added enough cheese to my likeing
2 tbsp parmesan cheese
*** i cut this recipe in half to serve 2-3 people
Directions:
1. In your slow cooker, add the onions and the melted margarine
2. Cover and cook on high for 30-35 minutes until the onions get a litte brown around the edges
3. In a small bowl. blend the flour, sugar, pepper and worchestshire sauce and a litte bit of broth until it forms a paste ( or close to it)
4. Stir the flour mixture and broth into the crockpot with onions
5. Cover: cook on low for 7-9 hoursor high for 3 -4 hours
6. About 10 minutes before serving, place bread on a broiler pan and sprinkle with the mozza and parmesan cheese
7. (I may try next time to put the bread and soup in the oven under broil for more flavor)
8. Broil until the cheese is bubbly
9. Top individual servings of soup with 1 slice and serve
