spicy chicken in a crockpot Ingredients:
15 ounces black beans, rinsed and drained |
30 1/2 ounces canned corn, drained |
1 cup thick and chunky salsa |
6 chicken breast, boneless skinless |
8 ounces cream cheese |
1 cup shredded cheddar cheese |
Directions:
1. In crockpot, mix beans, corn and 1/2 cup salsa. Top with chicken and pour remaining salsa over chicken cover and cook on high 2.5 - 3 hours, or until chicken is tender and white. Cut chicken into bite sized pieces. Add cream cheese and heat until it melts and blends into sauce. Serve over rice. top with shredded cheese. |
