This is about as easy as it gets. I made it for the folks at my hubby's work & they RAVED about it ! It really is delicious. I tripled it & it still cooked up just fine . Ingredients:
2 lbs skinless chicken |
1 red or green bell pepper, chopped |
1 lg onion, chopped |
1 lg bunch green onions,tops and bottoms,chopped |
2 stalks celery, diced |
1 15-oz can stewed tomatoes, undrained and chopped |
3 cloves garlic, minced |
1 t granulated sugar |
1 t paprika |
1 t cajun seasoning |
1 t salt |
1 t black pepper |
1 t lemon juice |
louisiana hot sauce to taste |
2 c prepared rice |
Directions:
1. Place chicken in bottom of crockpot. 2. Add the remaining ingred. except for lemon juice, hot sauce & rice. Cover; cook on Low for 8-10 hrs or on Hi for 4-5 hrs. 3. In last hr of cooking, add lemon juice & hot sauce. 4. Serve over hot rice. |
