Crockpot Chicken Cacciatore |

Low in fat and sodium. Ingredients:
3 lbs bone-in chicken thighs, skin removed |
14 ounces diced tomatoes seasoned with basil garlic & oregano |
6 ounces tomato paste |
1 cup chicken broth |
1 onion, sliced |
4 garlic cloves, minced |
1 green bell pepper, chopped |
1 cup sliced mushrooms |
1/2 cup dry red wine |
1 teaspoon dried italian seasoning |
1/8 teaspoon pepper |
1/2 teaspoon salt |
2 tablespoons cornstarch |
3 tablespoons water |
Directions:
1. Place all ingredients except cornstarch and water in slow cooker. Cover and cook on low 6-8 hours until chicken is thoroughly cooked and tender. 2. Combine cornstarch and water in small bowl and mix well. Stir into crockpot. Cover and cook on low 15-20 minutes until thickened. Serve with pasta or rice. |
