Just in time for the cooler weather, this is an easy, stick-to-your-ribs soup that is delicious and filling. The recipe doubles easily for a crowd. You can use low fat soups and fat free chicken broth for a lower calorie version. Serve with a nice crusty bread. Ingredients:
1 (10 3/4 ounce) can cream of mushroom soup |
2 (10 3/4 ounce) cans cream of chicken soup |
1 (32 ounce) carton chicken broth |
1 cup raw wild rice |
1 lb cooked and diced chicken |
1/2 cup diced onion |
1/2 cup diced celery |
1/2 cup diced carrot |
1 garlic clove, minced |
1 cup sliced fresh mushrooms |
Directions:
1. Mix all ingredients in crockpot. 2. Cook on low for 6 to 7 hours. 3. If soup gets to thick, thin with milk or water. |
