Crockpot Cauliflower Green Enchilada Sauce |

Lynn Alley crockpot vegetables. Ingredients:
12 corn tortillas, divided |
1 (15 ounce) can black beans, drained |
2 tomatoes, chopped |
1 onion, sliced |
1 (16 ounce) bag frozen cauliflower, chopped |
1 cup black olives, sliced |
1 (28 ounce) can green enchilada sauce |
1/2 lb cheese, shredded, divided |
Directions:
1. Spray pam in crockpot. 2. Overlap 4 tortillas. 3. Mix the black beans, tomatoes, onions, cauliflower and olives. 4. Spread 1/2 vegetable mixture, 1/2 cup of cheese, 1/2 cup green enchilada sauce, layer tortillas. 5. Repeat layers ending with tortillas. 6. Top with rest of enchilada sauce. 7. End up with cheese for the last 30 minutes. |
