Pulled pork crockpot carnitas recipe from my friend Christa. We served on tortillas with sour cream and salsa for toppings with black beans and spanish rice on the side. Ingredients:
1 (3 -4 lb) boneless pork roast |
3 garlic cloves, minced |
2 teaspoons olive oil |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 bunch green onion, chopped |
1 1/2 cups fresh cilantro |
1 cup salsa |
1 cup chicken broth |
1 (4 ounce) can green chilies, chopped |
tortilla |
Directions:
1. Put roast in slow cooker, season with garlic, salt and pepper. 2. Add green onions, salsa, broth, and chilis to the pot. 3. Cover and cook on low for 6-8 hours or until tender. 4. Remove meat from crockpot and shred. 5. Return meat to crockpot and heat through. 6. Serve on tortillas with your choice of garnishes. |
