Crockpot Athenian Shrimp in Tomato and Feta |

Crock pot Shrimp Dinner. Ingredients:
2 tablespoons olive oil |
2 medium onion, chop |
2 garlic clove, minced |
56 oz crushed tomatoes, in thick puree |
12 ounces tomato paste |
1/2 cup dry wine |
4 tablespoons chopped parsley |
2 teaspoon dried oregano |
1/2 teaspoon black pepper, freshly-ground |
2 1/2 pounds shrimp, peeled, deveined |
2 ounces feta cheese, in 1/4 cubes |
Directions:
1. Heat oil and saute onions and garlic until the onions are softened. 2. Transfer the onions and garlic to a 5 quart crock pot. 3. Add the tomatoes, the tomato paste, wine, parsley, oregano and black pepper. 4. Cover and cook for 6 to 8 hours on low. 5. Increase the heat to High and add the shrimp. 6. Cook for about 15 minutes. 7. Stir in the Feta Cheese and serve immediately. |
