4 cups vegetable broth |
4 cups tomatoes, diced |
1 tablespoon fresh basil, chopped |
1/2 teaspoon dried oregano |
3 carrots, chopped |
3 stalks celery, chopped |
1/2 cup onion, chopped |
2 zucchini, chopped |
2 yellow squash, chopped |
1 cup green beans, chopped |
3 garlic cloves, minced |
2 bay leaves |
salt and pepper |
1 1/2 cups uncooked whole wheat macaroni |
Directions:
1. Combine all ingredients except macaroni in crock pot. 2. Cover and cook on low for 4 to 6 hours. 3. Add the uncooked macaroni. Turn crock pot to high and cook for 20 to 30 minutes more, or until macaroni is soft. 4. Remove bay leaves before serving. |
