Crock Pot Thai Style Chicken |

Just a really simple, flavorful meal. And cheap. Cook time includes time to marinate. Ingredients:
1 broiler-fryer chicken, whole |
1/4 cup peanut oil |
1/4 cup tamari |
2 -4 tablespoons rice vinegar (or substitute with lime juice) |
2 -4 tablespoons fish sauce |
1 tablespoon chili-garlic sauce |
3 garlic cloves, crushed |
Directions:
1. Place all the ingredients but the fryer in a crock pot. Adjust flavors to taste. 2. Place fryer in, breast side down. Allow it to marinate for at least two hours (and up to overnight), covered, in the fridge. 3. Flip the fryer over, breast side up. Turn crock pot on low and cook for 4-6 hours. 4. Serve with steamed vegetables or on a salad. I like it with a peanut sauce. |
