Crock Pot Tamale Casserole |

Haven't tried this yet. Not actually sure why it doesn't just use tomato sauce instead of whole canned tomatoes, so if anyone tries it, please give me your thoughts! Ingredients:
1 1/2 lbs ground beef |
1 large onion, chopped |
1/3 cup oil |
28 ounces whole tomatoes |
1 cup cornmeal |
1 (8 3/4 ounce) can corn |
2 eggs |
1 teaspoon garlic salt |
1 tablespoon chili powder |
Directions:
1. Spray crock pot with cooking spray. Brown beef on stove top, drain and set aside. 2. Saute onion in oil. Puree tomatoes in blender. When onions are slightly brown, add pureed tomatoes. 3. Stirring well, add corn meal very slowly. Stir constantly to prevent lumping. 4. Add meat and corn. 5. Beat eggs lightly and add along with spices. 6. Pour into crock pot and cook on low 6-8 hours. |
