Easy crockpot meal. Ingredients:
6 boneless skinless chicken thighs |
2 (15 ounce) cans tomatoes and green chilies |
1 ounce taco seasoning mix |
18 taco shells |
1 cup sour cream |
1 cup cheddar cheese, shredded |
1 cup cheese, shredded |
1/2 cup cilantro |
3 cups brown rice, cooked |
3 cups refried beans |
Directions:
1. Throw first 3 ingredients in crock pot. 2. Cook on high 4-5 hours or low 7-8 hours. 3. Serve in taco shells. Top with cheese, sour cream, and cilantro. Serve with brown rice and refried beans as a side dish. 4. Double for the freezer. |
