Crock Pot Stuffed Peppers |

You can substitute 2 cans of tomato soup diluted with some water or 2 cups of salsa in place of the tomato sauce/water combo. Ingredients:
6 medium green peppers, (select tall rather than wide ones, any color) |
1 pound ground turkey |
1/3 cup brown rice, uncooked |
1 onion, grated |
1 salt and pepper |
1 tsp oregano |
1 tsp parsley |
1 clove garlic |
1 tsp basil |
1 tsp chili powder |
1 cup tomato sauce |
1 cup water |
Directions:
1. Cut the top off and remove seeds from peppers. Combine beef, rice, onion and seasonings. 2. Stuff each pepper about 2/3 full. Stand the peppers side-by-side in the slow cooker. 3. Combine tomato sauce and water and pour over the peppers. 4. Cook on LOW for 6-8 hours. If desired, heat more sauce to serve with the peppers. |
