Crock Pot Roast Beef

Easy & Delish I used 1 2 1/2 - 3lb eye round roast beef you can use what ever cut you like. Gravy is so good!
Ingredients:
2 1/2-3 lbs beef roast
1 (2 ounce) package dry onion soup mix
1 shallot, chopped
1 garlic clove, minced
1/4 teaspoon black pepper
Directions:
1. Place roast in crock pot.
2. Cover roast with shallot, garlic & pepper.
3. Sprinkle onion soup on top.
4. Cover crock pot.
5. Cook on low about 8hrs.
6. If gravy is desired.
7. Strain juices & put in a small pan.
8. Add 1/2- 1 cup water.
9. Heat to boil.
10. Mix 1-2 tbs corn starch with a little water.
11. Blend into juices.
12. Heat & stir until desired thickness.
13. Serve with mashed potatoes.
14. Serves 4-5.
