This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gardner Estate in Frisco, Texas in 1994. Ingredients:
1 pound red kidney beans soaked overnight in water |
1-1/2 cup white rice |
16 ounce can stewed tomatoes |
1 ham hock |
1 teaspoon basil |
1 teaspoon thyme |
1 white onion chopped |
2 clove garlic |
1 teaspoon white pepper |
1 teaspoon salt |
Directions:
1. Mix all ingredients except rice together and place in crock pot. 2. Cook for 6 hours on low. 3. Add rice during final 2 hours of cooking. |
