Crock Pot Pineapple Daiquiri Sunday |

I like serving this dessert when I have company but not the time to prepare something. Ingredients:
1 fresh pineapple, cored, peeled and cut into 1/2 inch chunks or 1 (20 ounce) can crushed pineapple, drained |
1/2 cup dark rum |
1/2 cup sugar |
3 tablespoons lime juice |
2 limes, zest of, cut in 2 inch long strips |
1 tablespoon cornstarch |
fresh raspberry (optional) |
Directions:
1. Place pineapple in bottom of slow cooker. 2. Mix together rum, sugar, lime juice, lime zest and cornstarch. 3. Pour over pineapple. 4. Cook on High for 3 to 4 hours. 5. Serve warm. 6. Can be served over ice cream, your favorite pound cake or short cake. 7. When raspberries are in season, place a few on top of pineapple daiquiri. |
