Ingredients:
1 medium onion |
2 medium carrots |
2 stalks celery |
1 red bell pepper, seeded, cut into 1/2 inch pieces |
1 medium zucchini, scrubbed, sliced into 1/2 inch rounds |
2 garlic cloves, minced |
2 (14 ounce) cans low sodium beef broth |
1 (28 ounce) can crushed tomatoes |
2 (15 ounce) cans kidney beans, drained |
2 teaspoons dried marjoram |
1/4 teaspoon black pepper |
1 1/2 cups cooked rice |
Directions:
1. add all ingredients except rice to crock pot. 2. Cover; cook on low 8 to 10 hours[high 4 to 5 hours] Add cooked rice and stir to combine. |
