Crock-Pot Meatloaf and Packet Potatoes |

This is a nice, classic meatloaf cooked in the crockpot with a packet of golden potatoes cooked right on the top. Just add a veggie and you have a complete, easy meal. My measurements are approx. because I don't measure anything when I'm cooking. Ingredients:
2 lbs lean ground beef |
1/4 cup green bell pepper, chopped |
1 small onion, diced |
1 egg |
1/2 cup breadcrumbs |
2 tablespoons steak sauce (like a-1) |
1 tablespoon ketchup |
1 teaspoon garlic powder |
1 teaspoon season salt |
fresh ground pepper |
4 yukon gold potatoes, diced with skin on |
1 teaspoon season salt |
2 teaspoons olive oil |
Directions:
1. In a large bowl combine all ingredients except potatoes, second amount of seasoned salt and olive oil. Mix thoroughly and pat into the bottom of your crock. I just level mine out, covering the entire bottom of the crock. Then, take a large piece of aluminum foil and place the diced potatoes, drizzle with olive oil and season with seasoned salt. Then, fold the aluminum foil into a nice packet and place on top of the meatloaf. 2. Cook on High for 3 to 4 hours until done. 3. I serve this as is with ketchup on the side because that is the way we like it. Feel free to top with tomato sauce or gravy. |
