Crock Pot Macaroni and Cheese (Lighter)

My family LOVES the high fat version (Crock Pot Macaroni and Cheese), so we slimmed it down without losing taste.
Ingredients:
8 ounces elbow macaroni
12 ounces fat-free evaporated milk
1 1/2 cups skim milk
2 eggs
3 cups 2% cheddar cheese, shredded
Directions:
1. Spray crockpot with cooking spray.
2. Beat eggs, fat free evaporated milk and skim milk in a large bowl.
3. Add remaining ingredients, reserving 1/2 c cheese.
4. Pour into crockpot and sprinkle reserved cheese on top.
5. Cook on low for 5 to 6 hours, resisting the temptation to lift the lid and peek.
