My family LOVES the high fat version (Crock Pot Macaroni and Cheese), so we slimmed it down without losing taste. Ingredients:
8 ounces elbow macaroni |
12 ounces fat-free evaporated milk |
1 1/2 cups skim milk |
2 eggs |
3 cups 2% cheddar cheese, shredded |
Directions:
1. Spray crockpot with cooking spray. 2. Beat eggs, fat free evaporated milk and skim milk in a large bowl. 3. Add remaining ingredients, reserving 1/2 c cheese. 4. Pour into crockpot and sprinkle reserved cheese on top. 5. Cook on low for 5 to 6 hours, resisting the temptation to lift the lid and peek. |
