Crock Pot Lentil Beef Soup |

Easy & Delicious! Ingredients:
3 lbs beef tips |
1/4 cup flour |
1 lb lentils, picked over & rinsed |
1 small onion, chopped |
2 carrots, peeled & diced |
2 celery hearts, finely chopped |
1 red bell pepper, chopped |
1 (14 ounce) can diced tomatoes, with juice |
3 tablespoons tomato paste |
6 -7 cups chicken broth, low sodium |
1 tablespoon thyme |
1 tablespoon oregano |
1 teaspoon cumin |
1 teaspoon curry |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 dash cayenne |
Directions:
1. Combine beef tips with flour in the crock pot. 2. Add remaining ingredients & mix together. 3. Cook on High for 6 hours. 4. **To change it to a thicker consistency, which I prefer, take 4-6 cups without the meat (2 cups at a time) and blend in a food processor or with a hand blender. 5.
