Crock Pot Jerked Chicken Sandwiches |

I got this recipe from a friend who loves ANYTHING to do with Jamaica. Ingredients:
3 tablespoons jamaican jerk spice |
1 1/2 lbs boneless skinless chicken thighs |
1 large green peppers or 1 large red pepper, chopped |
1 medium onion, chopped |
1/2 cup chicken broth |
1/4 cup ketchup |
6 -7 hoagie rolls, split |
Directions:
1. Rub jerk seasoning generously over chicken thighs. 2. place pepper and onion in bottom of crock pot. 3. Place chicken over vegetables. 4. In a small bowl, combine broth and ketchup; mix well. 5. Pour broth mixture over chicken. 6. Cover; cook on low for 6-8 hours. 7. Remove chicken from crock pot and shred. 8. Return to crock pot and mix well. 9. With a slotted spoon place chicken mixture into buns. |
