Crock Pot Jambalaya
Ingredients:
14 oz chicken
13 oz smoked sausage
1 medium onion
1 green bell pepper
4 stalks celery
5 garlic cloves
28 oz crushed tomatoes
1 1/2 cup chicken broth
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons cajun seasoning
1 1/2 teaspoon cayenne pepper
2 cups raw brown rice
Directions:
1. Combine chicken, sausage, chopped bell pepper, celery and chopped onion in slow cooker.
2. Add tomatoes, chicken broth, oregano, parsley, cajun seasoning, and pepper; stir gently.
3. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
4. About 30 to 45 minutes before eating, add hot cooked rice; heat thoroughly.
